Accessibility Standards for non browser based interfaces

Hi All,

I am working on a new system specification and at the moment we dont know if it will be browser based or not - it may be desktop / client software.
That being the case, I am less familiar with standards for non browser based interfaces. We are currently looking at some ISO's. While they cover common HCI concepts, I think they are a little thin on interface accessibility - particularly around the additional provision for partialy sighted users etc.
Could someone recommend alternative standards or reference material?

"Inclusive" Series of Books

Anyone familiar with this series of books?  They seem intriguing but are really expensive, and I haven't found any reviews.  Some titles include:

Why Don't You Use Web Content Accessibility Guidelines; WCAG 2.0

I'm writing a paper on what is hindering the adoption of WCAG 2.0 and though I have a number of factors in mind already, I would like the document to be as comprehensive as possible.  

So I'm hoping maybe people here can give me further insights into the factors you think are hindering the adoption of WCAG 2.0.

New soft drink user experience

I just came back from lunch at a fast food restaurant where they were heavily promoting how you can over 100 flavors of soft drinks now.  They had 2 brand new Freestyle dispenser machines.  The part I found fascinating: despite a large, interactive touch screen display and a *fairly* siimple task, the restaurant had not one, but two, assistants helping each and every person get a drink.
