I make very simple & easy usability-tests with the Screen-Grabbing-Tool Silverback: http://silverbackapp.com/ If your students use MacBooks with built in VideoCamera.

We're the developers of an online usability testing tool called Loop11 (www.Loop11.com). If you haven't already tried Loop11, please do. We currently offer free usage of our tool to students at colleges and universities who are studying usability, user experience or related courses.
