I´m interested in studying the effect of different colours in
interfaces. I mean, how can I choose the best colour to communicate
something, to stress something, etc. What colour for a buttom, what
colour for a line...

I would like to find book on that. Can I ask for suggestions?

Maybe there´s not book aboutcolours in Interfaces but there're books about
colour wich can be applied to interfaces. I mean general books about
colour wich
can teach about their meaning and effects.

I found interesting a book called Interaction of Colour and another
entitled Pantone Guide to Communicating with Colour

You should look at the discipline called "Information
Design." A good place to start is:

A great book for understanding how color works is Colin Ware's book,
Information Visualization Perception for Design. Chapters 4 and 5 are
directly applicable to what you're looking for. (For more technical info,
especially check out the section on preattentive processing.)

The key in using color is to not use too much of it for encoding
information. This ends up raising the separation bar between signal and
noise. Lots of color results in things competing for attention and causing
confusion. Going by the Graphic Design 101 rules, you should be able to
design in greyscale and add color when and where only absolutely necessary.

Cheers,
Lisa
